15 - Minute Black Bean Salad (serves a family or plenty of leftovers)
This salad is very flavorful, full of nutrition and protein and will keep for days in the fridge. A great salad to make ahead as it gets better and better as it marinates.
1 - 15 oz. black beans, drained and rinsed
1 cup canned corn, drained
8 cherry tomatoes cut in quarters or 16 grape tomatoes cut in half
1/2 cup minced onion
2 cloves of minced garlic
1/2 cup diced red pepper
1/4 cup chopped cilantro or for those like me, parsley
2 Tbsp. Extra Virgin Olive Oil
3 Tbsp. fresh lemon juice
salt and pepper to taste
Mix all ingredients together and serve.
