15 - Minute Black Bean Salad (serves a family or plenty of leftovers)

This salad is very flavorful, full of nutrition and protein and will keep for days in the fridge. A great salad to make ahead as it gets better and better as it marinates.


  • 1 - 15 oz. black beans, drained and rinsed

  • 1 cup canned corn, drained

  • 8 cherry tomatoes cut in quarters or 16 grape tomatoes cut in half

  • 1/2 cup minced onion

  • 2 cloves of minced garlic

  • 1/2 cup diced red pepper

  • 1/4 cup chopped cilantro or for those like me, parsley

  • 2 Tbsp. Extra Virgin Olive Oil

  • 3 Tbsp. fresh lemon juice

  • salt and pepper to taste


Mix all ingredients together and serve.
