Apple Cranberry Sauce
A variation of the traditional apple sauce this sauce is great with a pork roast, fresh ham, or turkey.
12 oz. fresh cranberries
4 tart apples (Granny Smiths are great) peeled, cored and chopped
1 orange - peeled and cut up into small pieces and reserve the juice
1/2 cup dried apricots chopped
1/4 tsp. minced fresh ginger
1 tsp. ground cinnamon
1/2 tsp. vanilla
4 Tbsp. sugar or sugar substitute
Place all ingredients except the sugar in a saucepan and bring to a boil over medium heat.
Cover and reduce heat and cook until most of the liquid is absorbed and the fruits are very soft.
Add sugar to taste - it may not need 4 Tbs.
Cool and store in a jar or plastic container in the refrigerator
