Apple Crisp

This recipe is from my high school Home Economics class. Miss Sabatino would be proud to know that this recipe has been made in my house every fall for almost 50 years. I always pick enough apples to make both a pie or two and one apple crisp. Served warm with a good vanilla ice cream is something my family looks forward to each fall.

Ingredients for Apple layer

  • 3 lbs of cooking apples (about 9 apples) peeled, cored and sliced.

  • 1/4 tsp. ground cinnamon

  • 1/8 tsp. ground nutmeg

  • 1/8 tsp. salt

  • 1 Tbsp. of lemon juice along with the zest of 1/2 lemon

  • 1/4 cup of sugar

  • 1/8 tsp. vanilla

Ingredients for Topping

1 cup flour

1 cup brown sugar

1/2 cup butter-melted

1 tsp. cinnamon

  • Mix all of the apple layer ingredients in a large bowl and toss

  • Place apple mixture into a greased 9"x 12" Pyrex baking dish

  • Mix flour, brown sugar and cinnamon in a small bowl

  • Quickly add melted butter to the flour mixture and toss until it forms large crumbles

  • Place crumble topping over apple layer

  • Bake at 375F for 30 minutes

  • Cool a bit before serving warm over vanilla ice cream
