Asian Cabbage Salad (serves a family)
All parts of this salad can be made ahead and tossed together just prior to serving.
1 head of Napa Cabbage
4 green onions/scallions
4 Tbsp. butter or substitute
4 Tbsp. sesame seeds
1 small package of sliced almonds
2 packages of Ramen noodles (discard seasoning packets)
1/4 cup Rice Wine Vinegar
1/2 cup sugar or sugar substitute (note proportions)
3/4 cup oil
3 Tbsp. soy sauce
Thinly slice Napa cabbage and scallions. Toss and chill in a large Ziploc bag.
Add butter to a skillet and brown sesame seeds, crushed Ramen noodles and almonds - cool and store in a tightly sealed container.
Combine rice wine vinegar, sugar, oil and soy sauce and bring to boil to dissolve sugar - cool
At dinner time toss all in a large bowl
