Chickpea Salad (2-3 servings)



Ingredients

  • 1 can of chickpeas - drained

  • 1/2 Tbsp. red wine vinegar

  • 1 tsp. lemon juice

  • 1 1/2 Tbsp. red wine vinegar

  • 1 cup diced plum tomatoes

  • 1/4 cup kalamata olives

  • 1/4 cup chopped red onion

  • 2 1/2 Tbs. Extra Virgin Olive Oil

  • 1/4 cup chopped fresh basil

  • 1/8 cup chopped fresh parsley

  • salt & pepper to taste

Directions

  • Toss drained chickpeas with 1/2 Tbsp.red wine vinegar and lemon juice

  • Add tomatoes, onion and olives to chickpeas

  • Add parsley and basil

  • Whisk Olive Oil and red wine vinegar and pour over vegetables

  • Season with salt and pepper
