Chickpea Salad (2-3 servings)

Ingredients
1 can of chickpeas - drained
1/2 Tbsp. red wine vinegar
1 tsp. lemon juice
1 1/2 Tbsp. red wine vinegar
1 cup diced plum tomatoes
1/4 cup kalamata olives
1/4 cup chopped red onion
2 1/2 Tbs. Extra Virgin Olive Oil
1/4 cup chopped fresh basil
1/8 cup chopped fresh parsley
salt & pepper to taste
Directions
Toss drained chickpeas with 1/2 Tbsp.red wine vinegar and lemon juice
Add tomatoes, onion and olives to chickpeas
Add parsley and basil
Whisk Olive Oil and red wine vinegar and pour over vegetables
Season with salt and pepper
