Movie Night Popcorn

This is a very easy way to pop popcorn but you need to have a lid (Instant Pot makes a glass lid to fit the Instant Pots) that fits on your Instant pot or else you will have popcorn all over your kitchen. Coconut oil is used because it heats at the proper temperature without burning. You cannot substitute vegetable or olive oil as they will not pop the kernels.


Ingredients:

  • 2 Tbsp. butter

  • 3 Tbsp. coconut oil

  • 1/2 cup popcorn kernels

  • salt to taste

Directions:

  • Set Instant Pot to saute and up the temp to High (or more if that is the way to up the temp on your IP)

  • Add coconut oil and butter and allow them to melt completely and start to sizzle (very important step to wait until the oils sizzle)

  • Add popcorn and stir so all kernels are coated with oil

  • Place glass lid on top , popcorn will begin popping in about 2-3 minutes. Turn off IP when about 3/4 of kernels are popped. They will continue to pop but will not burn.

  • When the kernels stop popping, carefully remove lid and pour out into a bowl and salt to taste. Additional melted butter can also be mixed in or you can add a flavoring your family likes.
