No-Knead Sandwich Bread

This is one of my favorite recipes to make bread for every day use. I use molasses so my bread appears to be dark.
Ingredients
1 cup lukewarm water (110F)
1/4 cup orange juice
4 Tbs. melted butter or 1/4 cup vegetable oil
3 Tbs. molasses, maple syrup or corn syrup (I use molasses)
2 tsps. quick rising yeast
1/4 cup dry milk
1 1/4 tsp salt
3 cups unbleached wheat flour
Directions
Thoroughly grease or spray a 8 1/2" x 4 1/5" loaf pan
Combine all ingredients in the bowl of a standing mixer
Using the dough hook, mix for about 3 minutes - mixture will be very stick and elastic
Scoop the dough into the loaf pan and smooth down with wet fingers
Cover with lightly greased saran wrap or I use a hotel freebie shower cap puffed out
let dough proof in a warm place for about 60-90 minutes or until bread just crests over the top of the pan
Uncover the bread and bake @350F for 35-40 minutes--tenting it with aluminium foil after 10-15 minutes
Remove from oven - loaf should sound hollow when lightly thumped - or digital thermometer registers 190 - 195F
After 5 minutes turn it out onto a cooling rack and brush the top with butter - cool the bread completely before slicing
Store the bread in plastic - 2-3 days at room temp or refrigerate or freeze.
