Salad Dressing 101



Making salad dressing at home is an excellent way to be sure that your dressing is as nutritionally sound as the healthy salad you've created. Commercial salad dressings can be calorie laden, high in sodium and often sweetened with high fructose corn syrup. Many also contain preservatives and dyes. A recommended serving size on all brands is 2 tablespoons, so you could easily double the amount of calories, sodium and sugar by being heavy handed. These are my favorite go-to recipes. Most contain honey as the sweetener, but you can substitute a sugar alternative like Stevia if you wish. Beware that sugar substitutes should not be added on a 1:1 ratio so check on the label for the proper sugar equivalent. As you will see there are many common elements in these recipes and before you know it, you will be able to put your own twist on a dressing using your favorite add ins.


Citrus Vinaigrette


Ingredients

  • 3 Tbs. orange juice

  • 2 Tbs. lemon juice

  • 1 clove minced garlic

  • 1 Tbs. Dijon Mustard

  • 2 Tbs. honey

  • 2 Tbs. Extra Virgin Olive Oil

  • 1/8 tsp. salt

  • 1/8 tsp. black pepper

Directions

Place all ingredients in to a jar with a lid and shake vigorously.


**This recipe can also be used to marinate chicken before cooking and slicing over a salad. Be sure to discard any unused marinade - it should never be used on the salad.


Zesty Lime Dressing


Ingredients

  • 2 Tbs. lime juice

  • 1 tsp. Dijon mustard

  • 1/4 cup Extra Virgin Olive Oil

  • 3 Tbs. rice wine vinegar

  • 1 tsp. honey

  • 1 tsp. salt

  • 1 tsp. black pepper

Directions

Place all ingredients into a jar with a lid and shake vigorously.

** Dressing can also be used as a marinade.


Balsamic Vinaigrette


Ingredients

  • 1/2 cup balsamic vinegar

  • 1 cup Extra Virgin Olive Oil

  • 1 Tbs. honey

  • 2 cloves of minced garlic

  • 1 tsp. oregano

  • 1/2 tsp. basil

  • 1/4 tsp. onion powder

  • 1/4 tsp. salt

Directions

Place all ingredients into a jar with a lid and shake vigorously.


Creamy Balsamic Dressing


Ingredients

  • 4 cloves of minced garlic

  • 2 Tbs. lemon juice

  • 1 Tbs. Dijon mustard

  • 1 Tbs. honey

  • 2 tsp. mixed Italian seasoning (oregano, basil etc.)

  • 1 1/2 tsp. salt

  • 1/2 cup balsamic vinegar

  • 3/4 cup Extra Virgin Olive Oil

Directions

  • Place all ingredients except the oil in the jar of a blender or food processor and blend

  • With the blender on low, slowly drizzle the oil into the mixture. Most blenders have a removable center piece in the lid for doing this. The mixture will become creamy.


Creamy Avocado Dressing


Ingredients

  • 1 ripe avocado, cut into small pieces

  • 1/4 cup wine vinegar

  • Juice of 1 lemon

  • salt/pepper to taste

  • 3/4 cup Extra Virgin Olive Oil

Directions

  • Place all ingredients except the oil in the jar of a blender or food processor and blend

  • With the blender on low, slowly drizzle the oil into the mixture. Most blenders have a removable center piece in the lid for doing this. The mixture will become creamy.

Caesar Dressing


Ingredients

  • 1 egg

  • 1 Tbs. anchovy paste (optional)

  • 2 cloves of minced garlic

  • 1/2 tsp. (may add more if not using anchovy paste)

  • 1 tsp. black pepper

  • 1/2 Tbs. white wine vinegar

  • 1 tsp. mustard powder

  • juice of 1/2 lemon

  • 1/4 cup grated Pecorino Romano or Parmesan cheese

  • 1 cup Extra Virgin Olive oil


Directions

  • Place all ingredients except the cheese and oil to a blender or food processor and blend.

  • With the blender on low, slowly drizzle the oil into the mixture. Most blenders have a removable center piece in the lid for doing this. The mixture will become creamy.

  • Stir in cheese.

  • If the dressing is too thick you can thin with any type of milk.

**You can turn this dressing into a blue cheese dressing, by eliminating the anchovy paste and substituting crumbled blue cheese for the Italian cheese.


Lemon Poppy Seed Dressing

This dressing is my version of the Panera Bread dressing


Ingredients

  • 1/2 cup Extra Virgin Olive Oil

  • 1/2 cup lime or lemon juice

  • 1/4 cup honey

  • 1 diced shallot

  • 1 clove minced garlic

  • 1 Tbs. Dijon mustard

  • 1/4 tsp. salt

  • 1/4 tsp. black pepper

  • 2 tsp. poppy seeds

Directions

  • Place all ingredients into a jar with a lid and shake vigorously.

  • Thin dressing with OJ if it is too thick.


Greek Lemon Dressing


Ingredients

  • 1/2 cup Extra Virgin Olive Oil

  • 1/4 cup red wine vinegar

  • 2 Tbs. lemon juice

  • 1 Tbs. honey

  • 2 tsps. Dijon mustard

  • 2 cloves minced garlic

  • 1/2 tsp. dried oregano

  • 1/4 tsp. salt

  • 1/4 tsp. pepper


Directions

Place all ingredients into a jar with a lid and shake vigorously.


Asian Sesame Ginger Dressing


Ingredients

  • 2 Tbs. light soy sauce (or Tamari)

  • 1/2 cup vegetable oil

  • 3 Tbs. rice wine vinegar

  • 1 Tbs. sesame oil

  • 1 Tbs. lime juice (lemon if you don't have lime)

  • 1 1/2 Tbs. of sesame seeds

  • 1 clove minced garlic

  • 3 Tbs. honey

  • 1 Tbs. grated fresh ginger

  • 1 tsp. Sriracha (optional or to taste)

  • 2 Tbs. water


Directions

Place all ingredients into a jar with a lid and shake vigorously.


Ranch Dressing


Ingredients

  • 1/2 cup mayo

  • 1/2 cup sour cream

  • 1/2 cup buttermilk

  • 1 tsp. white wine vinegar

  • 1/2 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/2 tsp. salt

  • 2 Tbs. minced fresh dill

  • 2 Tbs. minced fresh parsley

  • 2 Tbs. minced fresh chives

**dried herbs can be substituted for the fresh

**no buttermilk? Pour 1/2 Tbs. lemon juice or white vinegar into 1/2 cup milk. let it sit at room temperature for 10 minutes and then stir.


Directions

  • Whisk together mayo, sour cream and buttermilk until well blended.

  • Add vinegar, herbs and powders and whisk until blended.
